A Traditional Sweet & Healthy Drink
Amazake is a traditional, sweet Japanese drink made from fermented rice. It has a thick, creamy consistency and a comforting, naturally sweet flavor. With a history spanning hundreds of years, it is renowned not only for its taste but also for its health benefits, often nicknamed the "drinkable IV drip" due to its rich content of vitamins, amino acids, and digestive enzymes.
Two Types of Amazake
There are two main varieties of amazake, distinguished by their ingredients and alcohol content:
- Koji Amazake: This version is made from rice koji mold, steamed rice, and water. The enzymes in the koji break down the rice starches into natural sugars, creating a sweet flavor without any added sugar. This type is non-alcoholic and is safe for all ages to enjoy.
- Sake Kasu Amazake: This type is made using sake lees (sake kasu), the pressed mash left over from sake production. It is mixed with water and sugar to create the drink. Because it's made from a byproduct of sake brewing, it contains a low level of alcohol.
A Drink for All Seasons
Amazake is most famously enjoyed during the cold winter months, especially around the New Year. It is often sold hot at festivals and shrines, providing a warm and nourishing treat. However, it is also enjoyed chilled during the summer as a way to combat summer fatigue (natsubate) due to its impressive nutritional profile.
